  1. In a medium bowl, mix together the miso, sake, sugar, and soy sauce until smooth.
  2. Add the salmon fillets and turn to coat. Cover and refrigerate for 30 minutes.
  3. Preheat the oven to 450ºF.
  4. Transfer the salmon fillets to a baking dish and pour any extra marinade over the top.
  5. Bake for about 10 minutes, until the fish is flaky and the sauce has thickened and browned in places.
  6. If desired, run the fish under the broiler for a minute or two to brown the glaze.
  7. Garnish with sesame seeds and/or sliced scallions, if using.
