Healthy Bell Pepper Nachos

New year, new health goals! Sticking to New Year’s resolutions is easier said than done. One easy tip is to find substitutes for your go-to snacks. If you’re a nacho lover, like we are, we’ve found the perfect substitute to keep your healthy habits in check while also satisfying your taste buds – Healthy Bell Pepper Nachos.

Healthy Bell Pepper Nachos are a healthy and tasty snack to serve guests or have as your nachos substitute. This healthy alternative takes only  25 minutes and requires minimal ingredients. Feel free to customize with your own toppings of choice.

In this recipe, we use lean ground beef, soybean oil, soy cheese, and an assortment of bell peppers. We add flavor through taco seasoning and charring the peppers in an air fryer. Can you say delicious? We add avocado and plain Greek yogurt (can be substituted with low-fat sour cream) as toppings, but you can add whatever you typically add to your nachos.

Healthy Bell Pepper Nachos

  • 5 bell pepper (red, yellow, orange)
  • 1 tsp soybean oil
  • 1 pound ground beef
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 cup soy cheese
  • 2 avocados
  • 1 container plain Greek yogurt or substitute for sour cream


  • Cut bell peppers into fourths and scoop out the seeds and pith. Once your peppers are cut set them aside while you brown your ground beef. After your beef is fully cooked, strain and mix chili powder, cumin, black pepper, and salt into ground beef until evenly coated.
    2) Take the cut bell peppers and put a spoonful of ground beef into each one, sprinkle grated soy cheese on top. Bake on parchment paper at 375 degrees for 10 minutes. Once cooked to your preference top with the toppings of your choice and enjoy!
