Ingredients
Marinade
  • 1/4cup Olive Oil
  • 1teaspoon lime rind, grated
  • 2 1/2tablespoons fresh lime juice
  • 2tablespoons Worcestershire sauce
  • 1 1/2 teaspoons Ground Cumin
  • 1/2teaspoons dried oregano
  • 1teaspoon Salt
  • 1/2teaspoon coarse ground black pepper
  • 2 garlic clovesminced
  • Fresh cilantro to tastechopped
  • 114.25 ounce can chicken broth
Fajitas
  • 1pound flank steak
  • 1pound boneless, skinless chicken breasts
  • 1large Vidalia onioncut into 16 wedges
  • 4 bell peppers (red, yellow, orange)cut into thick slices
  • Flour tortillas
Optional Garnishes
  • salsa, sour cream, shredded cheese
Instructions
  1. Mix all marinade ingredients together in a large bowl.
  2. Trim fat from steak. Score a diamond pattern on both sides.
  3. Lightly score top of chicken.
  4. Combine 1 1/2 cups marinade, steak and chicken in gallon zip-top bag. Can be marinated in separate bags. Marinate in refrigerator for 4 hours or overnight. Turn occasionally.
  5. Combine remaining marinade with peppers and onions in gallon zip-top bag. Refrigerate.
  6. Heat grill while removing meats from marinade. Discard meat marinade. Grill meat 8 minutes per side or to desired doneness.
  7. While cooking meat, put peppers and onions and their marinade into small skillet. Cover and cook till tender.
  8. Tortillas may be wrapped in foil and heated on grill or warmed in microwave.
  9. Cut meat on the diagonal into thin slices. Arrange meat and vegetables in 9×13 dish and drizzle with warm marinade from vegetables.
  10. Serve warm. Top with garnishes as desired. Enjoy!
