Quick & Healthy Homemade Fajitas
lime rind, grated
fresh lime juice
coarse ground black pepper
Fresh cilantro to taste
can chicken broth
boneless, skinless chicken breasts
cut into 16 wedges
bell peppers (red, yellow, orange)
cut into thick slices
salsa, sour cream, shredded cheese
Mix all marinade ingredients together in a large bowl.
Trim fat from steak. Score a diamond pattern on both sides.
Lightly score top of chicken.
Combine 1 1/2 cups marinade, steak and chicken in gallon zip-top bag. Can be marinated in separate bags. Marinate in refrigerator for 4 hours or overnight. Turn occasionally.
Combine remaining marinade with peppers and onions in gallon zip-top bag. Refrigerate.
Heat grill while removing meats from marinade. Discard meat marinade. Grill meat 8 minutes per side or to desired doneness.
While cooking meat, put peppers and onions and their marinade into small skillet. Cover and cook till tender.
Tortillas may be wrapped in foil and heated on grill or warmed in microwave.
Cut meat on the diagonal into thin slices. Arrange meat and vegetables in 9×13 dish and drizzle with warm marinade from vegetables.
Serve warm. Top with garnishes as desired. Enjoy!
