Ingredients
  • 1pound Silken Tofucrumbled
  • 1pound Cream Cheeselow-fat, cubed
  • 1cup Mayonnaiselow-fat
  • 1teaspoon Ground Pepper
  • 1pound frozen spinachthawed, drained, chopped
  • 1pound marinated artichoke heartsdrained, coarsely chopped
  • 1/2cup green onionschopped
  • roasted pepperfor garnish (optional)
Instructions
  1. Heat oven to 350 F.
  2. Beat tofu until smooth; mix in cream cheese, mayonnaise and pepper.
  3. Fold in spinach, artichokes and green onions.
  4. Divide mixture equally into 12 4-oz. au gratin dishes.
  5. Sprinkle soy cheese on top, if desired.
  6. Bake 15 to 20 minutes, or until bubbly and browned on top.
