Healthy Turkey Soy Chili

This recipe from the United Soybean Board is hearty and delicious, yet healthy and packed with protein. It includes textured soy protein (TSP), which is made from soy flour and usually used as a meat replacement. It can be found in natural food stores or the health foods section of your local grocery.

Healthy Turkey Soy Chili

Servings 4 people


  • 1/2 cups Water boiling
  • 1/3 cup TSP
  • 1/3 pound ground turkey breast
  • 1/2 cups onions chopped
  • 1/4 tablespoon Garlic minced
  • 1/4 tablespoon soybean oil or vegetable oil
  • 1 tablespoons tomatos canned, diced, including liquid
  • 2 teaspoons tomatos canned, diced, including liquid
  • 1 cup tomato sauce canned
  • 2 teaspoons green chilies canned, diced
  • 2-1/3 teaspoons chili powder
  • 1/3 teaspoon Salt
  • 1/4 tablespoon jalapeños peppers minced
  • 2 cups Water


  • In a large bowl, pour boiling water over soy protein.
  • In a 14-quart pot, sauté turkey, onions, peppers and garlic in oil over medium high heat until turkey is no longer pink.
  • Add rehydrated soy protein and remaining ingredients.
  • Bring to a boil, reduce heat and simmer uncovered for 45 minutes.
  • Serve with assorted condiments such as shredded, low-fat Cheddar cheese, yogurt, sour cream and/or minced onion.
